12 Muffins

Citric Chia Seeds Muffins

Makes 12 muffins

  • 1 1/2 cups quinoa flour (375 ml)

  • 2 tbsp Chia seeds (30 ml)

  • 1 1/2 tbsp cornstarch or arrowroot (22 ml)

  • 1 1/2 tbsp baking powder (GF, if needed) (7 ml)

  • 1/2 tsp fine sea salt (2 ml)

  • 1/4 tsp baking soda (1 ml)

  • 2 large eggs

  • 3/4 cup plain yogurt (175 ml)

  • 1/4 cup unrefined virgin coconut oil, warmed, or unsalted butter, melted (60 ml)

  • 1/2 cup liquid honey or agave nectar (125 ml)

  • 2 tsp finely grated orange, or tangerine, or lime zest

  • Preheat oven to 375 ºF (190 ºC)
    10-cup muffin pan, sprayed with nonstick cooking spray

  • In a large bowl, whisk together quinoa flour, chia seeds, cornstarch, baking powder, baking soda and salt.

  • In a medium bowl, whisk together honey, eggs, yogurt, oil and citric zest until well blended.

  • Add the egg mixture to the flour mixture and stir until just blended.

  • Divide batter equally among prepared muffin cups.

  • Bake in preheated oven for 20 to 24 minutes or until tops are golden brown and a toothpick inserted in a center comes out clean. Let cool in pan on a wire rack for 3 minutes, then transfer to the rack to cool.
